Product Description:
Yacon is in the Sunflower family. Scientific name is Smallanthus sonchifolius. It is native to Central and Northern Andes in South America. It has been traditionally grown as vegetable for thousands of years.
♥How to Use♥
They are mainly grown for the juicy tubers, but leaves can be dried for tea. After harvesting and curing the tubers have a pleasantly sweet flavor, and a crunch of a jicama. (For more information on harvesting and curing, you can watch the video below this description.) Tubers can be eaten raw or cooked. It can also be made into syrup.
♥How to Grow♥
Start Yacon in spring, or indoor a few weeks before the last day of frost. Plant it in full sun to part shade. If you live in a warm area it's best to plant it in part shade. Summers in Southern California (zone 10) can reach 90F+, and they are grown in part shade. Maintain soil moist. When the starts to die the tubers are ready for harvest. This usually happens when cold weather starts. Tubers can be cured to sweeten for consumption. Crowns can be saved for the following growing season.
