Sunchokes are one of the most hardy tuber crops you can plant. One plant can produce pounds of food.  Under right conditions one plant can even produce tens to hundreds of pounds of tubers that are edible raw or cooked!

Sunchokes AKA Jerusalem Artichokes, or Sunroot (Helianthus tuberosus) are native to central to eastern North America. Sunchokes belong in the Sunflower family.  These plants grow 6-12 FT tall. Hardiness in zone 4-10. Grows best in full sun, well drained soil, moderate watering.

This is the kind of crop that usually only needs to be planted once and they’ll keep returning from any small bits of tubers left in the ground. They are great to grow in containers and raised beds as well. Tubers will start to sprout when the weather gets warm.  They are fast growing, and sensitive to the cold. Once the leaves show signs of stress from the cold, the plant will die back and ready for harvest.  

When eaten raw, sunchokes contain prebiotics that feed gut bacteria to maintain healthy immunity.  It has a crunchy, dense texture similar to a water chestnut when eaten raw.  It has a slight sweetness.  I notice the taste may vary depending on soil and climate. When cooked, it taste similar to potatoes, but without the starch. Sunchokes contain inulin.  This makes it a great substitute for potato lovers who is concern of spiking blood sugar.  

Red Fuseau & White Fuseau are spreading varieties.  Tubers will grow where the roots spread. Red Fuseau has stronger artichoke flavor than White Fuseau due to anthocyanin, antioxidant rich pigment in the skin. This variety has thin skin, requires a little more moisture in soil to maintain firmness. White Fuseau has smooth skin, is more hardy and has longer shelf life.  These tubers stay firm longer than Red Fuseau.

Both varieties are mildly sweet and crunchy. Slice thinly to add to salads, great to dip in salad dressings, guacamole, or salsas. Makes wonderful potato replacement in mashed potatoes, chips, roasted, stir fry.

What You Will Receive
You will be receiving tuber(s) of your choice.  Size of tubers may vary 1/2 inch to 1.5 inch. Usually large tubers are saved for consumption, and small tubers are for planting.

Order will be shipped with growing medium to retain freshness of these tubers.  Please choose quantity and type of Sunchokes you wish to grow!

Start tubers indoor few weeks before last frost and move plant outside after last frost.  It can also be planted directly in the ground after last frost.  If you are not ready to plant, keep tubers buried in growing medium that’s lightly moist. Keeping in cool temperature will slow the process of tubers sprouting.
